Undercounter clear-ice machine: field service manual
Covers: 15-in residential undercounter clear-cube machines (gravity-drain and pump models); notes on Hoshizaki KM-style cubers. Generic platform; confirm with model data.
A self-contained machine with a refrigerated evaporator, a water pan or reservoir with a recirculating pump, an insulated but unrefrigerated bin, and a drain (gravity or pump). Water flows over a cold plate so ice builds in clear layers, then a harvest releases it. Recognise it by the separate drain connection and a Clean/Check Water panel.
Safety first
- Unplug and shut off water before service.
- Sealed-system and hot gas valve body work is blocked: refer to an EPA 608-certified technician.
How it works
Freeze: the compressor chills the evaporator while a pump circulates water over it; minerals stay in the water, giving clear ice.
Harvest: the evaporator is warmed (hot gas on cubers like Hoshizaki, with the cycle ending by water level and a suction-line thermistor near 48°F) and ice drops into the bin; on some clear-ice designs a slab falls onto a heated cutter grid, which drips water into the bin during harvest (normal).
Leftover mineral-laden water is drained each cycle, which is why these machines need a drain.
A bin sensor or thermostat stops production when the bin is full; since the bin is not refrigerated, stored ice melts slowly and is replaced.
