Field pattern: 'oven runs hot / cold' (measure the average and calibrate before buying a sensor)
Ovens cycle above and below the set point, so a single thermometer reading misleads. Techs average readings over several cycles, use the control's temperature offset for small errors, and only replace the sensor when it fails a resistance test or the error is beyond the offset range. Replacing a good sensor (or a control) on a calibration complaint is the common wrong turn.
Before you start
- Hot oven surfaces: use gloves when placing or reading the thermometer
- Unplug or turn off the breaker before testing the sensor
